Sean's journey into the world of food began at a very young age when his family migrated to the rural Northern part of Bellingham, WA in the mid-1980s. Coming from the countryside of Cambodia, Sean's parents adopted the only way of life they knew and surrounded themselves with a community of farmers all over Whatcom County. Together, they would buy live cows and split them among other Cambodian families, friends, and neighbors, harvesting the animals on-site themselves and barbecuing some of the fresh cuts while cleaning the intestines and tripe over an open fire and huge pots of boiling water.

This way of living not only instilled in Sean a love for food but also a deep appreciation for the local community.  After graduating from high school, Sean attended culinary school and spent several years in the restaurant industry. While he enjoyed cooking and honed his skills in the kitchen, he still felt that something was missing.

In 2006, he joined a small start-up where he helped grow one of Seattle's first locally focused meat companies as the Vice President. After spending nine years building an industry that didn't exist before, he knew it was time to take his passion and knowledge to the next level.

In 2018, Sean approached a long-time friend from the restaurant industry with an idea and concept. Five years later, with five trucks, two locations, an amazing team, and more than 150 of the best partners throughout the city, they have created something truly remarkable.

None of this could be possible without the unwavering support of his amazing family. Sean's wife, Jenn, and their two children are his world, and he couldn't do what he does without their love and encouragement. He also has a dog that he claims is not his, but who he adores nonetheless.
