Preservation Meat Collective is a meat distribution company striving to discover, support, and distribute Pacific Northwest farms that focus on heritage breeds, sustainable, ethical animal husbandry, and regenerative farming practices.
We are food lovers, cooks and industry lifers. We’ll only offer products if we’ve visited the producer and it’s operation. You put your trust in us. We’ll put our trust in them and together we’ll offer the best product in the Northwest.
At our company, service is the foundation of everything we do. We know that offering the best products is not enough without exceptional service to match.
Having been in the industry for many years, we have forged strong relationships with our partners and know the value of treating everyone like family. We take this responsibility seriously and ensure that our philosophy is shared by everyone on our team so that we consistently live up to our words.
Our goal is to surpass your expectations in every aspect of our service. We believe that treating our partners like family is crucial to building trust and achieving success together. You can count on us to go above and beyond to ensure that you always receive the best service possible.
Thank you for choosing to partner with us. We are honored to have you on board and will do everything in our power to make your experience with us exceptional.
We love the expertise and professionalism of Preservation Meat Co. so much that we had Sean on our Podcast! We truly appreciate the hard work, dedication and standards they have to find the top quality farms and provide us with a top quality product. We have grown leaps and bounds as a restaurant and butcher shop because we TRUST IN THEM to provide us with only the best. And they come through every time.
I feel very lucky to live and work in an area with such high-quality meats. Even luckier though, is to have access to a purveyor like Preservation Meat Collective, which makes it possible to have them available to a small restaurant. Sean, Travis, Chase and everyone else have been so great to work with. Their invested in having the best products and making sure that their restaurant partners are able to shine.
Sean and Travis are not only family to us, their whole team literally makes our lives so much simpler as chefs and restaurant workers.
Doing something “right” and following through in all the little details is something you can taste and feel.
Preservation Meat Collective is the most coveted and important vendor we have.
It has been really fun and gratifying to have watched Sean and Travis grow this small, unique company into what it is today. Having worked with and supported PMC from its inception, seeing the commitment from them to continue improving on their goal to keep it local and support the small farmer with single origin sourcing has been amazing and impressive. It has truly been an honor for us to have gone along on this journey with them, and to continue working with them as a mission-aligned partner in improving the local economy and food chain.
Preservation Meats offer chefs the opportunity to support small scale meat production in the most effective way. The leg work that goes into vetting their farm partners is something we personally have to do with all of our suppliers. Sean does the job flawlessly, saving us time and piece of mind. They are our trusted source when it comes to meat that matches our program. -- Jason Stoneburner
It’s great working with a meat company that cares as much about the product they sell as I do about the product we serve.
Being able to have a working relationship with Preservation Meats is a true asset to our restaurant. Not only is it a pleasure dealing with the team, but it is hugely beneficial to be able to have conversations about what products they have coming down the line. Their diverse range of local products gives a restaurant like ours so many beautiful options to bring in and explore. This gets our staff excited about what we are serving and from where, and in turn this translates to a great guest experience at Le Coin. Preservation Meats has created a high-end organization that operates with a moral compass. What Travis and Sean have created should be the standard for companies alike.
When Sean and Travis launched PMC, we knew it was the inception of a meat collective that perfectly represented our sourcing ethics, making them a “one-stop shop” for our meats. Rather than scale every program out of its original ethos, PMC selects their ranches and restaurant partners carefully, leveraging whole-animal programs across a nimble group of chefs who will happily use all the parts to ensure a program’s viability. In a landscape of big corporate food service groups and commodity meat systems, a collective such as PMC subverts the system beautifully and provides us access to family-run farms with full transparency and - most importantly - the highest-quality meats our region has to offer.
Preservation Meat Co is an absolute pleasure to work with. The time and dedication they have put into finding and working with local farms has allowed us to put high quality and amazing products on our menus over the years. They are always happy to help you with whatever products you are looking for and will get you the best. On top of that they have introduced and educated our chefs about new farms and products, which has allowed them to grow over the years. We truly appreciate everything Preservation Meat Co does.
Navigating through the pandemic was not an easy task, but with Sean and Travis by our side, we never felt alone. From expertise and knowledge in the industry to staying ahead of the market curve, Sean and Travis have helped us edge the price increase, product shortages and along the way, grew our knowledge in small production meats. Sean and Travis are the extension to what makes our restaurant so special and we are so glad to have them on this journey with us.
Preservation Meat Collective is best in quality AND service. they supply greatness in the form of popular items + also specialty items. as a large restaurant that is also seasonal, we're often in need of both. sean + travis are equally interesting in their duality: experienced professionals meet laid-back friends. we love seeing them + checking-in with them often about usual availability as well as new items, purveyors + farms. our chefs often send pictures of their creations with preservation's amazing selections. eight row is built on family + relationships -- we literally can't do what we do without folks like those at preservation meat.
I first heard about Preservation Meat Collective from my friend Takashi at FlintCreek Cattle Co. I looked into it and thought the prices were too expensive for my restaurant. Sometime later I saw a video by Truth n’Food about Beast & Cleaver. I walk in the shop, and I meet Kevin and we talk about meat and bones, we agreed to trade his unused bones from Preservation Meat Collective for free ramen. At this time, I was buying cheap commodity bones, but my team noticed that the bones we got from Beast & Cleaver made our broth so much better. When we opened up our second location I called Sean again and we tried out the bones. Our customers immediately noticed. I have a special pressure cooker now that will allow me to use any part of the pig and I went to Pure Country with my team to learn more about it. The hog survived for so us we have to make them proud. After we visit the farm my team is more proud then ever with the product we use.
